In the difficult years of the 1900s, when Italian citizens sought to escape a devastated Europe due to one of the cruelest wars in history, Vicente and Elisa, our dear grandparents, left behind their beloved village in the warm south of Italy.

With hearts full of hope and nostalgia, they boarded the Undercover, a ship that would take them to a new life in Argentina, the country that would provide them a home for the rest of their days.

In that cold, dark hold, where thousands of immigrants shared their dreams and fears, a simple but comforting aroma of freshly made risotto gave them the strength to face the unknown.

Years later, in their honor, that same aroma inspires us and gives us the strength to bring “Undercover” to life. Here, two friends and passionate professionals come together to share a unique experience that combine love, dreams, and passion. An unforgettable culinary journey, where each bite is a seductive mix designed to awaken the senses and touch the heart.

I am a professional chef with Italian roots, born and raised in Argentina, whose passion for gastronomy has been nurtured in some of the world’s most prestigious kitchens.

A large part of my career was developed in France and its culture, a country that welcomed me and enriched my repertoire with a wide range of techniques and flavors.

From humble corners of the world to Michelin-starred restaurants, each experience has been a new challenge, each obstacle an opportunity to grow and perfect my culinary art.
